Easy No Bake Corn Dip

When corn is in season, at the end of the summer, turning on your oven is the last thing you might want to do. So, this quick and easy corn dip is a no bake dip that you can throw together in minutes. The directions do tell you to grill two of the four ears of corn, but it is completely optional and the dip is just as good with just fresh corn kernels, as long as they are fresh. So, if you don’t want to cook at all… don’t!

Ingredients for Corn Dip

Many corn dips start with a cream cheese base, but I find that very heavy and since dip is not dinner but usually comes beforehand, I make this dip with Greek yogurt as the base, along with a couple tablespoons of mayonnaise. It’s lighter and has a nice little tang that complements the sweet corn. This recipe also calls for some scallion (or red onion) and as much or as little Jalapeño pepper as you like. You can use a sharp Cheddar cheese or delicious red Leicester to add some body and then just season with the spices – smoked paprika, cumin and chili powder. The result is zesty and full of flavor.

Corn Dip in Minutes 

Once you’ve done the very little chopping that is required, this is a simple stir together recipe. Season it well with salt and freshly ground black pepper, but make sure to taste it first. It’s a good idea to taste it on whatever you plan to serve it with. Tortilla chips are a lot saltier than cucumber slices, so keep that in mind!

How to Serve Corn Dip

This is a versatile summer dip – you can serve it with tortilla chips or regular potato chips, but it also is nice on crackers with a piece of cheese or with vegetables like cucumber slices, celery sticks or endive spears. It can also be in a wrap with some grilled chicken or steak for a light lunch too.
